The Night Owl, a new cocktail and dance concept, is slated to open in downtown Saratoga Springs at 17 Maple Ave. in early October. After 2 ½ years, the Sinclair Saratoga has sold to Matt Pedersen, who will oversee the new club. The Sinclair will remain open for the remainder of the summer. The property will begin the changeover process after Labor Day weekend and will continue to be open through the remodel phase.

“I am excited to bring something a little more refined to the nightlife scene here in Saratoga,” said Pedersen. “We have so many great and diverse restaurants here and very little variety in late-night drinking and dancing options. When Hilary Morrison, the owner of the Sinclair Saratoga, and I started talking, I knew this was my opportunity. “

The Night Owl will pay close attention to the execution of their unique cocktail menu and will feature original creations from Pedersen and his talented team including a large variety of cocktails on-tap. Mixologists will be preparing bitters, syrups, and other ingredients all in house, utilizing the abundance of choices from the fall farmers markets.

The space will be punctuated with Hollywood era, art deco touches from the 1920s and 30s including elements sourced from a vintage movie theater. Rich, velvet banquets, handcrafted Tiger Eye wood tables and images from legendary nightlife venues such as Studio 54, Limelight and Don the Beachcombers will complete the look.

Craft cocktails and dancing will be the focus of the new venue with guest DJ’s from New York City and beyond performing nightly in the front room of the property. The “back room,” which is found behind a hidden bookcase, will take on a more cocktail salon ambiance with soft lounge seating and a hidden photo booth providing a keepsake of your evening. On weekends, the “back room” will feature performances by contortionists, burlesque dancers, sword swallowers and other special acts at the stroke of midnight.
Morrison intends to stay on and assist in the digital marketing and creative space for the new project. The Night Owl will operate Thursday through Saturday 7 p.m. to 4 a.m. Late night happy hour will run from 7 p.m. to 10 p.m., offering craft cocktails for $7, well drinks for $5, and select beers for $2.

In anticipation of the opening, The Night Owl will host “Matt’s Patio Party – a Summer Send-off,” in the courtyard at 17 Maple Ave. every Friday and Saturday from 5 p.m. to 2 a.m. Every week, guests can expect beach-party vibes, over-the-top tropical drinks and a special summer grill menu provided by their neighbor, Comfort Kitchen.
